Soft Lemon Cookies

Ingredients
  

  • 250 g Almond flour
  • 1 pinch Salt
  • 125 g Powdered sugar + some extra
  • 1 tsp Baking powder
  • 1/2 Lemon zest and juice
  • 1 tbsp molten butter
  • 2 Egg yolks

Instructions
 

  • Preheat oven 250 degrees Celcius
  • Mix almond flour with the pinch of salt, powdered sugar and baking powder
  • Add lemon zest, juice, molten butter and egg yolks to it and kneed until you have a soft and smooth dough
  • Roll balls (original recipe said 10 balls, but I would say 15-20) of the dough and roll through some powdered sugar
  • Place the cookies on a baking tray and push them so they are a little more flat
  • Switch off the oven and place the baking tray at the bottom of the oven
  • Leave the cookies in the closed oven for about 20 minutes so they will cook but not change colour
