Boil milk with some salt
Add the semolina
Stir and let it simmer for about 4-10 minutes
Add butter and turn off the heat
Then add the egg yolks and almonds or raisins
Beat the egg whites fluffy
Add the beaten eggwhites to the milk
Grease a pudding mold with some butter and sprinkle some breadcrumbs over it
Put the mixture in the pudding mould, only untill 3/4 filled
Close the mould firmly
Cook the pudding 2 hours au bain marie, make sure to have water filled up untill just under the rim of the pudding mold
Dry up the pudding without lid and serve with some fruit sauce for instance
