Peel and dice onion
Crush juniper berries with a mortar
Take the leaves off the thyme and rosemary and cut in small pieces
Caramelize sugar with 1 tablespoon of water in a small sauce pan
Add balsamic vinegar and 200ml red wine and 200ml water
Add thyme, rosemary, onion, garlic and juniper berries
Crumble stock cube over the sauce
Stir well
Let it simmer until reduced 50%
Strain the sauce
Add crumbled breakfast cake to the sauce and stir until dissolved
Set to the side
Fry the deer steaks
Add the leftover wine to the deer steak fat and bring to a boil
Add this to the sauce, stir well
