Place the onion rings in a bowl, squeeze a little lemon juice over and a pinch of salt, Toss to combine
Set aside for 10 minutes, drain and shake dry
This makes it less bitter and improves the texture
Add the lamb, cumin, egg, bread, paprika, garlic, rosemary, onion, salt and chilli and some cracked pepper to a bowl and mix until well combined (use your clean hands, it’s easier)
Shape the mixture into 4 patties, cover and refrigerate for 15 minutes to set them
ix the mayonnaise, mint, parsley, garlic, feta and lemon juice until well combined
Taste and season with salt and pepper
Heat a little olive oil on a BBQ at a high heat (or a pan)
Cook the patties until browned on the outside and medium/medium well on the inside
Assemble your burgers and dig in!
