Start a day ahead so the spices can really get into the meat
Clean the chicken inside and outside and dry with a kitchentowel
Grate the garlic, take the rosemary leaves off the twigs and chop it up in small pieces
Mix together with the paprika powder, lovage, coriander and a bit of salt and the oil
Put this mixture on the inside and outside of the whole chicken
After that put the chicken for a night in the fridge
If you have a rotisserie spit in your oven, put the chicken on it and put in a preheated oven of 180 degrees celcius
Don’t put it any higher in temperature, as this will make the outside black before the chicken is done on the inside
You should count on 90 minutes in the oven for 1,5kg of chicken
At the end of the time you can put the oven a bit higher in temperature to give the chicken a nice colour
If you don’t have a rotisserie spit? No worries!
And this part I like best about this hehe
Use a can of beer!
Drink half of the beer. I always leave half of the beer in the can and then I put the chicken on top of the beer can
I then put the chicken on the can on top of a dish or baking tray with a layer of water in it to keep the chicken nice and moist
