Put rice in a bowl with water
Soak for 20 minutes
After 10 minutes heat oil in a pot
Add cinnamon, cardemom and cloves and stir in cumin seeds
Cook until fragrant and toasted
Add onion and stir, sauté for about 10 minutes
Drain water from the rice, stir rice into the pot
Cook for about 3 minutes until lightly toasted
Add water and bring to a boil
Cover and reduce heat
Simmer for about 15 minutes, until water is absorbed
Let it rest for 5 minutes
Fluff and serve
