A colleague wanted to have this cake after she found a recipe online. I tried and…wow it’s super good and easy!The most difficult thing is the au bain marie part. But they sell these handy metal bowls to hang on top of a small pan to make it easier.
Ingredients
- 180 g Speculaas or Bastogne cookies
- 75 g Melted butter
- 300 g White Chocolate
- 200 ml Whipped cream
- 300 g Cream Cheese
- 100 g Mascarpone
- 75 g Sugar
- 150 g Raspberries
- Powdered sugar
- Raspberry jam
Instructions
Cake base
- Crush the cookies
- Mix butter and cookies together
- Cover the bottom of the tin and press the mix with the back of a spoon to the bottom
- Put in fridge
Cake filling
- Melt chocolate au bain marie
- Whip the cream
- Mix cream cheese with mascarpone, sugar and cream untill smooth
- Fold in the melted chocolate
- Put in the tin over the cookie bottom
- Put back into fridge for at least 4 hours
- Then decorate with raspberries on top and powdered sugar
- You can also first put a layer of jam on top of the cheese filling and then add the fruit on top
