Soft Lemon Cookies
Ingredients
- 250 g Almond flour
- 1 pinch Salt
- 125 g Powdered sugar + some extra
- 1 tsp Baking powder
- 1/2 Lemon zest and juice
- 1 tbsp molten butter
- 2 Egg yolks
Instructions
- Preheat oven 250 degrees Celcius
- Mix almond flour with the pinch of salt, powdered sugar and baking powder
- Add lemon zest, juice, molten butter and egg yolks to it and kneed until you have a soft and smooth dough
- Roll balls (original recipe said 10 balls, but I would say 15-20) of the dough and roll through some powdered sugar
- Place the cookies on a baking tray and push them so they are a little more flat
- Switch off the oven and place the baking tray at the bottom of the oven
- Leave the cookies in the closed oven for about 20 minutes so they will cook but not change colour
