Sauce for deer steak
Ingredients
- 1 Onion
- 1 clove Garlic
- 1 tbsp juniper berries
- 1 tbsp Brown sugar brun farin, bruine suiker
- 2 tbsp Balsamic vinegar
- 250 ml Red wine
- 2 twigs Thyme
- 2 twigs Rosemary
- 1 cube beef stock
- 1 slice breakfast cake ontbijtkoek
Instructions
- Peel and dice onion
- Crush juniper berries with a mortar
- Take the leaves off the thyme and rosemary and cut in small pieces
- Caramelize sugar with 1 tablespoon of water in a small sauce pan
- Add balsamic vinegar and 200ml red wine and 200ml water
- Add thyme, rosemary, onion, garlic and juniper berries
- Crumble stock cube over the sauce
- Stir well
- Let it simmer until reduced 50%
- Strain the sauce
- Add crumbled breakfast cake to the sauce and stir until dissolved
- Set to the side
- Fry the deer steaks
- Add the leftover wine to the deer steak fat and bring to a boil
- Add this to the sauce, stir well
