Red berry jelly (ribsgelé)

Equipment

  • 1 Big pot to sterilize the jars
  • Jars with lids

Ingredients
  

  • 1,5 kg Red berries
  • 3 dl Water
  • 700 g Sugar
  • Some cognac to clean the jars

Instructions
 

  • Boil water and red berries in a pot with a lid for 20 minutes.
  • Sieve the juice through a cotton cloth in a sieve and press the juice out of the boiled berries through the cloth.
  • Put the juice in a clean pot and add the sugar.
  • Boil again and let it simmer on weak to low heat during 45 minutes.
  • Sterilize the jars in boiling water (10 minutes and please put the jars in normal hot water first to keep it from breaking) and then add some cognac or other strong spirit to the jar and shake it through the whole jar. When done, remove the cognac
  • Put the hot jelly in the jars and screw on the lids. It should get jelly during the night.
  • This however didn’t work for me, I had to take all out of the jars again when it was still fully liquid after 2 days. I added some “syltesukker” and boiled it again for 10 minutes.
