Lamb Burger (Lamburger)

Ingredients
  

Patties

  • 500 g Lamb mince
  • 1/2 tsp Ground cumin
  • 1/2 tsp Paprika
  • 1 Egg Lightly beaten
  • 1/2 slice Bread soaked in 2 tbsp milk
  • 1 clove Garlic Finely chopped
  • 2 tsp Rosemary Very finely chopped
  • 1 Lemon, Zest
  • 1/2 Onion Finely chopped
  • 1/2 tsp Salt
  • 1/2 tsp Chili Powder

Mayonnaise

  • 1/2 cup Mayonnaise
  • 1/4 cup Feta Finely chopped
  • 2-3 tbsp Fresh mint leaves Very finely chopped
  • 1 clove Garlic Finely chopped
  • 2 tbsp Parsley Very finely chopped
  • 2 tsp Lemon juice

Toppings

  • Grilled haloumi slices, or smoked cheddar
  • Ripe tomatoes, cored and sliced
  • Red onion rings +lemon juice
  • Cucumber, sliced
  • Lettuce
  • Tomato relish
  • Ciabatta or burger buns, buttered and lightly grilled

Instructions
 

  • Place the onion rings in a bowl, squeeze a little lemon juice over and a pinch of salt, Toss to combine
  • Set aside for 10 minutes, drain and shake dry
  • This makes it less bitter and improves the texture
  • Add the lamb, cumin, egg, bread, paprika, garlic, rosemary, onion, salt and chilli and some cracked pepper to a bowl and mix until well combined (use your clean hands, it’s easier)
  • Shape the mixture into 4 patties, cover and refrigerate for 15 minutes to set them
  • ix the mayonnaise, mint, parsley, garlic, feta and lemon juice until well combined
  • Taste and season with salt and pepper
  • Heat a little olive oil on a BBQ at a high heat (or a pan)
  • Cook the patties until browned on the outside and medium/medium well on the inside
  • Assemble your burgers and dig in!
  • Enjoy!
