Biscuit cake
Ingredients
- 5 Eggs Room temperature, maybe a little warmer
- 150 g Sugar
- 150 g Self raising flour
- pinch Salt
Instructions
- Make sure the eggs are room temperature, maybe a little warmer towards bodytemperature (very important)
- Get everything in time out of the fridge, or warm up in warm/hot water.
- Preheat oven to 150-160 degrees Celsius
- Add the eggs, sugar and salt to a bowl. Put the mixer high and mix everything for a few minutes.
- Then 2 minutes on the lowest after the mixture became light yellow, the goal is to make an airy dough, so make sure the whisks are partly above the dough to add air to the mixture
- Now you can add the self raising flour to the mixture, mix it with a spatula, not with a mixer
- Prevent clumps of flour in the dough, maybe use a colander to add the flour
- Now you can add the dough to the form, you can put butter on the sides and/or use parchment paper for the bottom
- Put the cake for 40 minutes in the oven
