Apple pie filling

Ingredients
  

  • 2 kg Sweet/sour apples
  • 2 tbsp Lemon juice
  • 150 g Sugar
  • 100 g Brown sugar
  • 1 tbsp Cinnamon
  • 1/4 tsp Nutmeg
  • 1/4 tsp Cloves (powder)
  • 1/2 tsp Ginger (powder)
  • 50 g Corn starch
  • 1/4 tsp Salt
  • 500 ml water

Instructions
 

  • Take a big pan and add 2tbsp lemon juice
  • Peal the apples one by one and cut into cubes, add this to the pan with lemon juice and after each apple toss it well so all cubes are covered with lemon juice
  • Add sugar, cinnamon, nutmeg, cloves, ginger, corn starch and salt and scoop well so the apples are all covered with all the ingredients
  • Add the water and slowly bring to a simmer, let it simmer for 10-15 minutes until you see a bubbly syrup while the apples are softening a bit
  • Scoop the mixture into sterilized pots, close the pots
  • Add the pots to a pan and add water to the pan until the pots are 3cm under water
  • Bring the water to boil and let it boil for 20 minutes
  • Done! This will keep for months in a cool dark place (I keep it in the basement)
