Panini with mozzarella and pesto

Equipment

  • Panini Grill

Ingredients
  

  • ciabatta sandwich rolls
  • olive oil
  • basil pesto
  • slices of mozzarella cheese
  • sliced tomato
  • some salt and pepper

Instructions
 

  • Heat the (panini) grill
  • Cut the bread horizontally in half
  • Brush all sides with olive oil
  • Spread pesto on the insides of both halves
  • Layer each sandwich with the cheese and tomato
  •  Sprinkle with salt and pepper
  • Place the sandwiches on the grill, grill for 4 minutes or until bread is toasted and cheese is melted
  • Slice diagonally and serve warm
  • Enjoy!
