Semolina porridge

Semolina porridge

Ingredients
  

  • 35-40 g Semolina flour
  • 25 g Sugar
  • 500 ml Whole milk
  • 1 tsp Almond aroma
  • 100 g Soaked raisins

Semolina Pudding

  • 500 ml Milk
  • 100 g Semolina flour
  • 80 g Sugar
  • 2-3 Eggs
  • 30 g Butter
  • 1/2 Vanilla bean or vanilla sugar or lemon zest
  • 50 g Almonds or raisins
  • pinch Salt

Instructions
 

  • Boil the milk and then lower the heat
  • Add all but the raisins
  • Stir for 5-7 minutes, then add raisins
  • Done!

Semolina Pudding

  • Boil milk with some salt
  • Add the semolina
  • Stir and let it simmer for about 4-10 minutes
  • Add butter and turn off the heat
  • Then add the egg yolks and almonds or raisins
  • Beat the egg whites fluffy
  • Add the beaten eggwhites to the milk
  • Grease a pudding mold with some butter and sprinkle some breadcrumbs over it
  • Put the mixture in the pudding mould, only untill 3/4 filled
  • Close the mould firmly
  • Cook the pudding 2 hours au bain marie, make sure to have water filled up untill just under the rim of the pudding mold
  • Dry up the pudding without lid and serve with some fruit sauce for instance
  • Enjoy!
