Skyr Cake (no bake)

Ingredients
  

For the cake filling

  • 680 g Skyr (or yoghurt)
  • 125 g Heavy Cream (whipped)
  • 4 Gelatin sheets
  • jam Use the jam flavour of the fresh fruits you use
  • fresh fruit

For the cake bottom

  • Cookies of your choice I like speculaas or bastogne
  • melted butter

Instructions
 

Cake bottom

  • Mix both together. I do this on feeling. Don’t make it too wet
  • Cover bottom of your round baking tin. Push to the bottom with the back side of a spoon.
  • Put in the fridge

Cake filling

  • Put skyr in mixing container
  • Soften gelatine sheets in cold water for 10 minutes
  • Put 3 tablespoons of whipped cream in a pot and heat up
  • When softly boiling remove from heat
  • Add gelatin and stir well, untill gelatin is dissolved
  • Add this mix to the skyr
  • Add whipped cream and fold it in, start with a bit and add more and more
  • Put this mix on top of the cookie bottom
  • Put back in the fridge for 3 hours
  • Spread the jam on top and then add the fruit parts
  • Enjoy!
