Carrot Cake

I baked this cake often when I was in Iceland, a big hit. Moist and got a rich flavour. I have had this recipe for years, I think I found it online somewhere, can’t remember where I found it.

Equipment

  • 23 cm round tin
  • Oven
  • 2 Bowls

Ingredients
  

The cake

  • 3 dl Sunflower Oil
  • 6 Eggs
  • 400 g Grated Carrot
  • 300 g Brown Sugar
  • 350 g Selfraising Flour
  • 3 tsp Speculaas Spices
  • 100 g Walnuts
  • 50 g Raisins I don't usually add these
  • 3 tsp Baking Powder
  • zest of half an orange

The topping

  • 200 g Cream Cheese
  • 50 g Soft Butter
  • Juice of half a lemon
  • 60 g Powdered Sugar

Instructions
 

Cake

  • Mix eggs, sugar, sunflower oil until it’s a smooth mix.
  • Add flour and baking powder and mix.
  • Add orange zest and speculaas spices.
  • Mix again.
  • Add walnuts and raisins, fold it through the batter. Add carrot, also fold this in.
  • Put the batter in a 23cm round pan.
  • Bake in oven 60-70 minutes on 170 degrees Celsius.

Topping

  • Mix cream cheese with juice of half a lemon and powdered sugar through the butter.
  • Put on cooled down cake. Add some walnuts for decoration.
  • Enjoy!
