Sauce for deer steak

Ingredients
  

  • 1 Onion
  • 1 clove Garlic
  • 1 tbsp juniper berries
  • 1 tbsp Brown sugar brun farin, bruine suiker
  • 2 tbsp Balsamic vinegar
  • 250 ml Red wine
  • 2 twigs Thyme
  • 2 twigs Rosemary
  • 1 cube beef stock
  • 1 slice breakfast cake ontbijtkoek

Instructions
 

  • Peel and dice onion
  • Crush juniper berries with a mortar
  • Take the leaves off the thyme and rosemary and cut in small pieces
  • Caramelize sugar with 1 tablespoon of water in a small sauce pan
  • Add balsamic vinegar and 200ml red wine and 200ml water
  • Add thyme, rosemary, onion, garlic and juniper berries
  • Crumble stock cube over the sauce
  • Stir well
  • Let it simmer until reduced 50%
  • Strain the sauce
  • Add crumbled breakfast cake to the sauce and stir until dissolved
  • Set to the side
  • Fry the deer steaks
  • Add the leftover wine to the deer steak fat and bring to a boil
  • Add this to the sauce, stir well
