Asparagus Cream Soup 2
Ingredients
- 1 kg Asparagus
- 1 Onion
- 50 g Unsalted butter
- 1 L Chicken broth
- 80 ml Cream
- 2 twigs Thyme only need the leaves
- Lemon juice
- Pepper & Salt
Instructions
- Dice the onion
- Cut the tips off of 12 asparagus
- Cut the tips in halves
- Cut the asparagus in pieces of 2 cm
- Heat the butter in the pan, fruit the onion on low heat
- Add the cut asparagus and fry for 5 minutes
- Add the chicken broth
- Let it simmer for 20-25 minutes on low heat with lid on the pan
- Add pepper and salt to taste
- Boil the asparagus tips in a pan with water and salt for about 3-4 minutes and then drain
- Puree the soup with a hand blender
- Add the cream, add lemon juice to taste
- Serve with the asparagus tips
- Enjoy!
