Asparagus Cream Soup 2

Ingredients
  

  • 1 kg Asparagus
  • 1 Onion
  • 50 g Unsalted butter
  • 1 L Chicken broth
  • 80 ml Cream
  • 2 twigs Thyme only need the leaves
  • Lemon juice
  • Pepper & Salt

Instructions
 

  • Dice the onion
  • Cut the tips off of 12 asparagus
  • Cut the tips in halves
  • Cut the asparagus in pieces of 2 cm
  • Heat the butter in the pan, fruit the onion on low heat
  • Add the cut asparagus and fry for 5 minutes
  • Add the chicken broth
  • Let it simmer for 20-25 minutes on low heat with lid on the pan
  • Add pepper and salt to taste
  • Boil the asparagus tips in a pan with water and salt for about 3-4 minutes and then drain
  • Puree the soup with a hand blender
  • Add the cream, add lemon juice to taste
  • Serve with the asparagus tips
  • Enjoy!
