Asparagus Cream Soup 1
Ingredients
- 3/4 L Chicken broth, homemade or from a tablet
- 30 g Butter
- 30 g Flour
- 2 Egg yolks
- 1/8 L Cream
- Orange juice 1/2 orange
- 300 g Fresh asparagus (or 2 cans of asparagus)
- Pepper & Salt to taste
Instructions
- Make a fresh chicken broth or put 3/4L water in a pan and bring to a boil and add 1,5 tablets of chicken broth to it
- If you have fresh asparagus, clean them, peel them and cook until they are done in about 10-12 minutes and let them drain
- Melt butter in a pan, add the flour, stir together and let it fry a bit until it's done, keep stirring
- Add gradually and with small bits the broth to this
- Keep stirring until all is boiling and it is nicely smooth and creamy
- Let this soup base simmer for about 10 minutes
- Mix the egg yolks with the cream
- Add a little bit of the soup to this mixture
- Add the mixture in the soup pan
- Add the strained orange juice to the asparagus soup
- Add the asparagus to the soup
- Keep stirring and make sure that the soup will not boil anymore
- Add salt and pepper to taste
- Blend with hand blender to a smooth creamy soup
- You can add some ham cubes (100-150g) for extra filling or some smoked salmon (or maybe some crunchy bacon would be nice as well?)
